P&P Optica (Waterloo, ON) — hyperspectral meat quality

P&P Optica uses hyperspectral imaging + ML for meat quality assessment (fat, water, protein, freshness) + foreign-material detection. ~20 systems installed across pork and poultry operations in North America. Founders: Romek Pawluczyk (Polish photonics/spectroscopy, hologram designer; one of PPO’s spectrometers is on the International Space Station) and Olga Pawluczyk (CEO since 2005). Initial work: recycling industry + oil & gas (bitumen analysis). Pivoted to meat in 2015 after meat processors asked if PPO equipment could differentiate meat from fat.

Processors deployment: PPO systems are deployed “on the way out” in primary processing facilities and “on the way in” to secondary processors — virtually eliminating the possibility of foreign substances finding their way to the consumer. The CAAIN-funded Phase 3 work focuses on the primary meat producer side — telling farmers what their on-farm practices are yielding.

Critical detail: “Plastic and rubber is used in personal protective equipment, cardboard is used to box the product, and there’s metal in the tools and equipment used in the plant. All these different materials can create tiny pieces of foreign matter that are virtually undetectable and can stick to the product at various stages of processing.” PPO’s hyperspectral imaging can detect these via spectroscopy along with a typical vision-based camera. The technology “sees” things the human eye can’t discern.

mode40 (Steinbach, MB) — AI carcass cooling

mode40’s Meat Quality Management (MQM) system is a global first. Leveraging AI, mobile technology, and smart sensors for real-time adjustment of the carcass-cooling process, it provides primary processors access to data that enables rapid decision-making on individual carcasses, improving meat quality and food safety, and lowering costs.

Development path:

  1. Prototype developed in response to an Innovation Solutions Canada Challenge.
  2. CAAIN funding takes the concept from in-house lab development to pre-commercialisation.
  3. After MVP, mode40 moves to AAFC’s Lacombe Research and Development Centre for further development.
  4. One-year validation in 10 commercial meat processing plants to establish impact on the bottom line.
  5. ~3 months to fine-tune after real-world evaluation.

Climate-adaptation framing. The CAAIN-funded Clean Technology programme framing for Circulus is “livestock methane reduction: Technologies aimed at decreasing methane emissions and improving agricultural waste management.” The system integrates biological stabilization, solid-liquid separation, and membrane filtration to convert pig slurry into nitrate-rich biofertilizers, stabilized solids, and reusable clean water.
